Butternut SquashLast week I met my friend Susan in my old neighborhood. When we were trying to figure out a restaurant, she suggested Real Food Daily. The restaurant is literally a block and a half from my old condo so it was easy for me to find.

This is a true plant-based whole food diet restaurant! The menu is an intriguing mix of plant-based food (vegan), local and organic dishes. The thing I appreciated most about the menu was there was no guessing about content. The selections were all marked for easy reference:  Soy-Free, Gluten-Free and Nut Free. The only problem was making a decision. I am not used to having that many selections on a menu. As a vegetarian I usually have 3 or 4 choices so making a decision is simple. (more…)

Guest Article and Recipe by Kay Luckett

Here is a blog piece and the recipe written by my wonderful friend Kay Luckett. Kay is the former owner of Memorable Occasions, a catering and event production company in Los Angeles, CA.  She did this for 20 years and her biggest thrill was catering for Julia Child in 1991 before she escaped from L.A.  She now owns Get Organized, a business that organizes people and businesses in Prescott, AZ.

My friend Genene, who lives here in Prescott out by Thumb Butte, has a home that is a vegetarian paradise. The whole back yard was filled with huge containers of veggies that have grown all season and were just harvested. She and her husband, David, erected an amazing green house which they have filled with veggies that she says will grow most of the winter. These include green peppers, jalapeno peppers, tomatoes (both cherry and full size), herbs, marigolds, beets, and onions to name a few. (more…)

Home Again! And Tacos in a Hurry!

imageWe had a great time in New Orleans, but were very glad to get home. No place like it!

We got in late, tired and very hungry – bad combination! The fridge was bare and all the frozen entrees would take at least 20 minutes to thaw.  Fortunately we have canned food in the pantry and a garden to raid. (more…)

Low-Fat, Non-Dairy, Gluten-Free Vegetarian Enchiladas

My favorite food next to Italian is Mexican. I am not sure if it is the tomato or the comfort of pasta and tortillas.  Whatever it is, I am hooked.

I have not made Enchiladas in a long time.  They are messy and a little time consuming.  But I had the extra time today so I ended up making 2 medium size pans – one to eat now and one to freeze and eat later. (more…)
