Quick and Tasty Salsa
- Put all Basic ingredients in the food processor and puree for about 1 minute
- Add Flavoring ingredientsand continue to puree until smooth
- 1/4 cup lemon juice
- 1/2 cup fresh Italian Parsley or Cilantro (or both)
- 1 Tablespoon fresh oregano
- Pinch of cumin
- Up to 1/2 c water as needed to make the mixture smooth
- Coat a Dutch oven or deep pan with 2 Tablespoons of olive oil and add the mixture from the food processor
- Cook on the stove top for 20-30 minutes at a very slow boil, stirring often
- Cool and serve; store in the remainder in the fridge in a sealed container. It will last for about a month
