We ended up with a lot of extra food after the Fourth.  That is extra corn and potato salad.

I used the potato salad in a mock-nicoise salad. Made a big green salad – lettuce, green onion, celery and tomatoes. Next I added garbanzo beans (chick peas) instead of the tuna and a scoop of the left over potato salad instead of the traditional eggs and potatoes. I prefer asparagus to green beans, but either one works well. As for anchovies? Forget about it!

The corn was another matter. I used to make corn fritters. When we gave up eggs and cheese during our vegan year, they just disappeared from our diet. And evidently from my collection of recipes. Since we are eating a few eggs a week, I decided to try to approximate what I used to make. (more…)

The Year of Being Vegan: 2012 Lessons Learned Part 2

I have always been a plant-based eater; a vegetarian. Over the last year David and I decided to become vegans. It has been an incredible learning experience! Between now and the end of the years I will share some of the things I learned.

I spent a lot of time experimenting with egg replacers this year. It was a truly informative experience. What I discovered is that

there are certain recipes where there is NO substitute for the actual egg. These include pumpkin pie, meringues and waffles. Even Ener-G, the most popular egg replacer on the market, does not work well. (more…)

Substituting Eggs

This is the time of year when I start thinking seriously about desserts. I mean, what is Thanksgiving without Pumpkin Pie or Christmas without cookies ?

Those of us who eat a whole food plant-based diet making desserts is really a challenge. There is a lot of substituting that has to be done. For most things it is relatively easy to substitute For example you can substitute:

  • Milk = Nut milk
  • Gluten based flours = gluten-free baking mix or brown rice flour
  • Sugar = honey, maple syrup, coconut sugar or stevia
