Coconut Brown Rice

SNAGHTML5e0edc19We all have specific comfort foods. Usually sweets like chocolate or starchy foods like bread, potatoes, rice, pasta.

Sugary foods taste great but they don’t seem to fill me up or leave me feeling full. It doesn’t take long for me to start craving more.  For me, starches are the ticket. They taste good! And as an added benefit they actually make me feel full after I eat them. And as my Mom would say they “stick to my ribs.” (more…)

Vegan Mujadara–Lentils, Rice and Onions

lentilsIt is sooo cold! Like a lot of people we are enduring a major cold snap. All I have wanted to do for the last week is curl up in front of the fire, read and eat hot heavy food. Never mind salad, exercise or actually trying to think.

I have been craving lentils. Don’t know if it is the protein or the iron my body wants, but whatever it is, I have been fixated on lentils. There is nothing quite like lentil soup on a cold day. But I can’t live by soup alone, so decided to make a lentil and rice dish. It is a loosely Middle Eastern dish called Mujadara that is satisfying and extremely simple to make.  (more…)

Rice and Veggies

brown riceBrown rice is probably our most flexible staple. We use it as breakfast cereal, for specialty rice dishes (like Spanish Rice),  salads or a quick add to bean based meals for an extra protein boost.

At the end of every week we gather up any veggies we can find laying around, nuts and even beans. We throw them in a pan and add rice for a quick, thrifty meal. The trick is adding a good mix of herbs and mirepoix to give it great flavor without resorting to too much salt or soy sauce. (more…)
