Quick and Tasty Salsa

  1. Put all Basic ingredients in the food processor and puree for about 1 minute
  2. Add Flavoring ingredientsand continue to puree until smooth
    • 1/4 cup lemon juice
    • 1/2 cup fresh Italian Parsley or Cilantro (or both)
    • 1 Tablespoon fresh oregano
    • Pinch of cumin
    • Up to 1/2 c water as needed to make the mixture smooth
  3. Coat a Dutch oven or deep pan with 2 Tablespoons of olive oil and add the mixture from the food processor
  4. Cook on the stove top for 20-30 minutes at a very slow boil, stirring often
  5. Cool and serve; store in the remainder in the fridge in a sealed container. It will last for about a month
