QUICK BASIC ITALIAN RED SAUCE
- Sauté vegetables and herbs in olive oil
- 1/2 chopped onion
- Garlic to taste
- When onions are clear add:
- 1 Cup Mirepoix
- 1 Large Grated Zucchini (if you do not have it, leave it out, but it adds body and depth to the sauce)
- 1 Tablespoon chopped fresh Thyme (or 1 Teaspoon dried)
- 1 Tablespoon chopped fresh Basil (or 1 Teaspoon dried)
- 2 Teaspoons fresh chopped fresh Oregano (or 1/2 Teaspoon dried)
- OPTIONAL: 1 small Bell Pepper
- OPTIONAL: 1 stalk of Celery
- Cook on high stirring often for 7-8 minutes
- Add liquids
- 2 cans diced tomatoes
- 1/2 cup marinara sauce (from my freezer or from a jarred marinara sauce )
- Simmer for 10 minutes
