Vegan Pumpkin Pie

While I am trying to figure out what else to do with all my pumpkin I decided to make a trial run at a true whole food plant-based pie. One that is sugar-free, egg-free, dairy-free and gluten-free. Last year I made a dairy-free pie that was wonderful! This year the goal is a true vegan pumpkin pie – dairy-free and egg-free as well.

Last weekend I donned my Girl Scout attire (figuratively) and started experimenting so that Thanksgiving prep goes smoothly. I don’t want to be up to my elbows in pie failures come next Wednesday.

Water Scarcity May Force World to Go Vegetarian by 2050

Forks Over Knives – The Cookbook: Over 300 Recipes for Plant-Based Eating All Through the Year

forks over knives the cookbookThe new Forks Over Knives Cookbook arrived last week. The author Del Sroufe, is the man behind meals shown in the Forks Over Knives film.  The book is actually a collaboration between Sroufe and well-known Plant-Based chefs: Julieanna Hever, Judy Micklewright, Isa Chandra Moskowitz, and Darshana Thacker.

With 300 recipes to choose from, it is a good solid introductory collection of  vegan, low-fat cooking techniques and recipes. An added bonus is that many of the recipes are also gluten-free.

A Quick Word about Vitamin B12

Everyday, I hear that a plant-based diet is dangerous!  Stories abound! There are urban legends about Jane or John or Joe Doe who eat a plant-based diet are sick and/or dying. No one actually knows someone who admits to being Vitamin B12 deficient but the danger still lurks around every corner.

Evidently we have all heard about vitamin B12 deficiency. The problem is that we have heardabout it.  Maybe one person in a hundred can come up with a single fact about vitamin B12. So here are a few facts about B12 to think about.
