Lentil Loaf
- Preheat the oven to 350 degrees
- In a pan sauté
- 1 chopped onion
- 2 stalks of celery
- 1 grated or finally chopped carrot
- Garlic to taste
- While the vegetables are sautéing combine in a large bowl
- 3 cups cooked lentils (either precooked or canned)
- 1 cup cooked brown rice
- 2 T brown rice flour
- 1/3 cup salsa
- 2 eggs or egg substitue like 4T of applesauce
- When the onions are clear add herbs
- 1 teaspoon dried thyme
- 1/2 t dried oregano or marjoram
- 1/4 t dried sage
- Salt to taste
- Add the vegetable to the bowl with the other ingredients and mix well
- Put mixture into a bread loaf pan and bake
It is good to be home!
