Lentil Loaf

  1. Preheat the oven to 350 degrees
  2. In a pan sauté
    • 1 chopped onion
    • 2 stalks of celery
    • 1 grated or finally chopped carrot
    • Garlic to taste
  3. While the vegetables are sautéing combine in a large bowl
    • 3 cups cooked lentils (either precooked or canned)
    • 1 cup cooked brown rice
    • 2 T brown rice flour
    • 1/3 cup salsa
    • 2 eggs or egg substitue like 4T of applesauce
  4. When the onions are clear add herbs
    • 1 teaspoon dried thyme
    • 1/2 t dried oregano or marjoram
    • 1/4 t dried sage
    • Salt to taste
  5. Add the vegetable to the bowl with the other ingredients and mix well
  6. Put mixture  into a bread loaf pan and bake
